From Bryce Canyon we drove to Salt Lake City, where I have had the chance to visit the last 5 years to grade AP essays for work. I was excited to show Jen and the kids some of my favorite spots including a hike up Ensign Peak to see the entire valley followed by some authentic Belgian waffles with pearl sugar at Bruges Waffles and Frites. We also took the free public train to dinner at my favorite restaurant, Red Iguana, which has been featured on the Food Network show Diners, Drive-Ins and Dives. We stayed at a hotel in the city for one night before heading to Vernal, UT which is right next to Dinosaur National Monument.
